| Rachel’s Beef Stew |

Serves: 4-6 (depending on how hungry you are)
Ingredients
- 1 1/2 lbs stewing beef
- 2T flour (I used rice flour this time, but would normally use All Purpose – this might eliminate the need for the Corn Starch)
- 2T Olive Oil
- 1C carrots, chopped
- 3 potatoes, cut into small cubes
- salt, fresh ground pepper, nutmeg
- 1/2 bottle red wine
- 1T aged balsamic vinegar
- 2 boxes beef stock (about 6 C, I think)
- 3C water
- 5 cloves garlic, diced
- 6 red spring onions, chopped
- 1 LB mushrooms, sliced
- 1T corn starch, 2T water (optional)
Directions
- Heat pan medium heat; add oil; add beef; sprinkle with 1T flour; brown. (Can do in batches so the pan isn’t overcrowded.)(*I read that it’s best to dry the meat so it browns properly – I didn’t do this, and the beef didn’t get that nice brown crust on it, it just cooked, but still tasted amazing.)
- Add onion and carrot; about 3 minutes (or until onion is getting soft and translucent). Add garlic and mushrooms; about 3 minutes. Add nutmeg, salt and pepper.
- Add wine; de-glaze the pan (I think it’s called) by scraping the good bits off the bottom from browning the meat. Cook a few minutes, then add the stock, water, balsamic vinegar and potatoes. Bring to a boil; keep boiling until potatoes are tender (15 min or less); turn heat down to low.
- Simmer 2 hours. If it doesn’t get thick enough, add corn starch (mix 1T corn starch with 2T water, then pour into soup – so it’s not lumpy).
- Serve with warmed crusty bread and roasted garlic butter (350 degree oven, cut top of a head of garlic exposing the cloves, drizzle with olive oil, wrap in foil, 20-45 minutes, depending on your oven. Let it cool, squeeze cloves out; mash into butter.), and a glass of red wine, while watching Julie and Julia with loved ones. (If it’s important to eat it while they are, it’s about half way, or a little more, through the movie that they have Boeuf Bourgignon)
